According to Fabrizio Romano, Bayern Munich is likely out of the running for Xavi Simons, so it will focus on Rennes attacker Désiré Doué.
Here is what Romano had to say on the Her We Go Podcast (as captured by @iMiaSanMia):
Xavi Simons is ‘getting really close’ to staying at RB Leipzig for another season. RBL are now clear favourites over Bayern. It’s not done yet, but Leipzig are very confident of getting it done in the next few days.
After being left behind in the race for Xavi Simons, Bayern are now working on signing Désiré Doué as they want to bring in one more attacking player. They’ve presented him with their project and have today bid up to €55m to Rennes. At the moment, there’s still no green light from Doué, who is talking to both PSG and Bayern. Paris are expected to bid again in the next few days. Once the player makes his decision, it will be quite easy to close the deal with Rennes.

Meanwhile, journalist Ben Jacobs (as captured by @iMiaSanMia) says that Paris Saint-Germain is prepared to spend up to €60 million:
PSG are prepared to pay close to €60m for Désiré Doué and are optimistic of persuading the player to join them, with Nasser Al-Khelaifi part of the negotiations.
It is possible that Bayern Munich walks away with neither Doué nor Simons.
