A couple weeks ago I had asked you all for some holiday baking ideas this Christmas season because I’m hoping to do a fair amount of baking.
I had quite the list of things I wanted to make: kvaefjordkake, pistachio-raspberry cake, cookies, cinammon rolls and more.
After much consideration, I have slightly winnowed that list.
First: We’re going to make an eggnog bread pudding with a spiced rum creme anglaise.
This seems like a perfect holiday spin on a classic pudding. The bread will either be challah, brioche or sourdough (depends on what is available/looks best), but I think the eggnog is going to give the pudding a super rich flavour.
Couple that with a warm, spided rum creme anglaise? It seems like the ideal crowd please.
Second: I’m still 50-50 on which cake. I have a feeling I won’t have all the tools needed to make a pistachio raspberry cake. But if I have that food processor, then I will be making it. I think it’ll be a nice, lighter option when also served with that rich bread pudding.
If not, then a classic chocolate cake could be the way to go. Although I’ll try to make some raspberry jam to cut through that sweetness.
As for cookies? I still like the coconut-pineapple idea if I make a chocolate cake. If not, I’m going to go with something more chocolate-forward. Chocolate chip is my go-to, but maybe I’ll try something new.
